Avacado Melt

Todays quick recipe is a real delight, simple to make and surprisingly filling. For Avocado to be a super food you dont need to do much to improve it however add a little onion, a slice of tomato, and a strip of cheese and with a few minutes in the toaster oven, you’ll be in for a treat.

*P.S. – when shopping for Avocados make sure to take it in your hand and squeeze it a bit, it should have a little give. If you already bought one not quite ripe, no problem, place it in a paper bag in your cabinet overnight. That should do the trick!

1. Prepare and cut Avacado along an axis around core

2. Slice onion, tomatoe, and your favorite cheese

3. Layer ingredients onto Avacado

4. Place in toaster oven at 350°F until cheese melts.

Next day delicious. For lunch today I made a pot of tumeric rice, broccoli, and yellow plantain to have with a left over avacado melt and slice of home made garlic toast.

The quick, 20 minute cook time, added to the affordability of the ingredients make for another winning meal.
